Everyone has one: the quick, easy delicious dinner, and we had a lot of fun batting ours around during this week’s editorial meeting.
(In a perfect world, they’re all healthful, easy to prepare, and go nicely with a buttery chardonnay. For Duo, the the on-the-go architect, the solution comes in the form of the pre-cooked chicken from Stop and Shop.)

Broccoli, garlic and olive oil tossed with pasta and grated cheese. I steam the broccoli in the microwave then chop it up and add it to a pan of garlic cooked in olive oil. Then I mix that up with pasta and some good olive oil and add lots of freshly grated Romano.

My Mother’s standard answer to that question was “Wait and See Pudding”!

It’s almost always about pasta and then whatever this peasant kitchen has to offer. The quicker you can prepare it, the better. My most fave is saute of garlic, pine nuts and Kalamata olives in EVOO. Toss over al dente pasta and add freshly grated Parmesan, some fresh herbs and red pepper flakes.

Agree about the pasta. You can add just about any veg (microwaved or raw if in season), a can of tuna or salmon (if adding fish, no cheese, please), or some other protien source, a quick saute in good oil (removing the garlic after it has flavored the oil) , a small salad (bagged is fine if you rinse) , and for you, Bruce, that buttery Chard. For me, a good but not too heavy red.

Spaghetti with turkey meatballs. Make three pounds of meat, serve some, freeze some, then you will be all set for the next time your gang wants it. Use Stop and Shop’s Simply Enjoy marinara sauce. Tastes like Rao’s, one-third the price.
Don’t forget to plan your week of meals, make a list, and shop just once during the week. You can always freeze your planned meal if somebody makes you a better offer.

When my son and I are called on to prepare the meal together we usually makes spaghetti with meat sauce. We might use turkey sausage (Sweet Italian) or hamburger. Then we add seasonings to Ragu and throw in some vegetables. The vegetables recently have been seasonal. We use eggplant, summer squash, onion, zucchini and tomatoes.
